Dalchini – India on your Plate – Reviewed

In India water changes its taste at every mile while a new dialect emerges every 4 Miles. This also adds to the Culinary variety that India has to offer. From Condiments and the spices to the varied cooking techniques, each one adds a unique flavour to different regional cuisines of India. This is what a Dalchini tries to offer all the different flavours of rich Indian Cuisine to your table.

I was Invited for the food tasting of such colourful and rich flavours of Indian Cuisine.

We started the evening with homemade and localised beverages from all over India.

Beverages:

Neer More, Pudine ki Shikanji, Gud di Lassi

Neer More: We in Pune also have the version of Buttermilk and we call it as “Taak”, But this was from the Chennai with a hint of curry leaf which gives a nice after taste of the curry leaves. Perfect in consistency. Its good to include Buttermilk in your daily meal.

Pudine ki Shikanji: This was the most refreshing drink of all. Tangy with a minty taste which is also gives a kick start to your digestive system. This should not be missed.

Gud Di Lassi: Typical Punjabi lassi, nice and thick, and you can have guilt free as it was sweetened with Jaggery. You should have a palate ready for the Jaggery infused Lassi.

Salads:

Beetroot PachadiBeetroot Pachadi
Beetroot Pachadi: Big chunks of boiled beetroot nicely mixed with curry leaf infused Yogurt. This was aptly sweet and sour with a slight after taste of curry leafs. This was nice and heathy way to have the Beetroot.

Aloo Channa Ka Chaat
Aloo Channa Ka Chaat: It was all mix flavour of Tangy flavour from the lime, Strong pungent flavour of Mustard sauce, Sweetness from honey dressing. Overall Diced Potato tossed in a Kasundi honey dressing mixed with crunchy Channa.

Appetizers:

Kundapur Aloo Ghee RoastKundapur Aloo Ghee Roast
Kundapur Aloo Ghee Roast: This had a strong connection with the costal region of Karnataka’s town name called Kundapur .The Potato Ghee Roast looks fiery with potato cubes dressed in a glossy scarlet hue, tempered with fragrant curry leaves, tossed in the freshly ground bevy of aromatic spices and roasted in ghee to give you a lip smacking dish worth every bite.  Kundapur Masala Powder is an indigenous, versatile spice mix which is used to flavour and give a distinct character to the universally popular Mangalorean Bunt Community specialty dish known as “Chicken Ghee Roast”, This was a Vegetarian version of it with Potato.

Palak Papadi Chaat

Palak Papadi Chaat: This appetizer comes from the land Nawabs a.k.a. Lucknow. In Lucknowni Chaat has a all together a very different and very distinct taste and method of preparation of chaat from rest of India or rather northern states of India. Palak Papadi Chaat is one of the unique gem from it, Crispy Palak leaves topped with potato and chutney, sweet dahi and loads of shev and garnished with fresh Aanardana.

Achar aur Cheese ka Panner

Achar aur Cheese ka Panner
Achar aur Cheese ka Panner: Very similar to the Achari Paneer but Paneer cubes were super mouth melting. Served with fresh Mint Chutney and some Salad.

Kothimbir Wadi

Kothimbir Wadi
Kothimbir Wadi: Our own delicacy from Maharashtra. Firstly steamed and then Fried to perfect crunchiness with bare minimum oil residue, served with sour Curd. Very nicely served in a bamboo basket.

Main Course:

Phaldari Kofta: As the name suggest its not the regular Mugalai Kofta, but a very unique combination of Raw Banana and Pumpkin kofta in a rich creamy brown gravy. If nobody tells you that what the kofta are made from you won’t able to guess it. This was so nicely made. The kofta’s were so delicate and the gravy was perfect with the spice levels.

Chennar Dolna: A traditional recipe from Bengali cuisine. So basically chenna is the coagulated milk and paneer is the coagulated milk which has been set firmly. Chennar is generally used in all most all the Bengali sweets. The spongy balls of Chennar and Potato cubes are cooked in ghee laced gravy, with Bengali spices.

24 Gante ki Dal: Its a very rare to get the nice and creamy dal in Pune which is slowed cooked almost for 24 hours and so the name goes for it. Thick and rich in aroma, creamy and I bet you just can’t stop having it.

All these Subjis were served with Desi Gheu ki Roti, Chapati and Malabari Parotta.

Ghee Rice: Long grain rice tossed in ghee with a sliced onion, Curry Leaf, and Cashew.

Desserts:

Khubani ka MeethaKhubani ka Meetha
Khubani ka Meetha: Khubani or Qubani ka meetha is an Indian sweet made from dried apricots and this is dessert is originated from Hyderabad. It is the perfect dessert to serve after a sumptuous meal. Qubani is a Urdu word means- ” Apricot” Meetha is a Urdu word means- “Sweet”. Its a very delicate dessert to make. De- seeded Apricot soaked overnight and blanched in a sugar syrup to achieve the perfect thickness and it is garnished with nuts and fresh cream of Malai. Its a out of the box dessert and you must try it.

Chukandar aur Akhrot ka Halwa
Chukandar aur Akhrot ka Halwa: Its a simple yet different dessert made from beetroot and walnut halwa cooked in ghee and sugar added as per the taste.

Serradura
Serradura: Its a Goan dessert with Portuguese Legacy. Layers of cream and crushed Marie Biscuits served in a small glass.

Dalchini is the only place where you get introduced to the local cuisine of pan India.

Launched in 2005, Indigo Delicatessen has defined the quintessential Deli experience in India over the years. With accolades and awards, and many a ‘firsts’ along the way, the Deli developed a tradition of delighting guests and building a patronage. It originates from the house of deGustibus Hospitality, the pioneering company that gave shape to the iconic Indigo Restaurant in Mumbai and had re-written the rules of luxury dining in India in the early 2000’s.
Indigo Deli is an all-day café that offers its guests a comfortable and friendly atmosphere with an extensive and absolutely scrumptious menu consisting of contemporary Western Comfort food, cooked using an array of techniques and practices – mostly European and American. The fare can be best described as honest, unpretentious, good food, cooked from the heart with local sustainable produce.

Each Deli is unique, with a certain central focus that defines the space. Yet, there are several aspects across the Delis that bind them. The colours and tones used within each of the Delis lends to a sense of comfort and warmth within the space and adds to the overall experience. This is mimicked by the friendly and attentive service received during the course of every dining experience.

After winning the hearts by opening its flagship outlet in Pune at Phoenix Marketcity Mall, They have opened their second outlet’s door at Koregaon Park. I was invited for the Food tasting of this outlet. The menu remains the same but, the love they spread while serving their scrumptious food has already taken the foodies to the next level.

We started the Evening with a little chat with the Chef Tushar and we also discussed the Positive vibe this place has. The place is done so well, It has a feel of old English cafe on a busy streets of London, With wide clear windows and the table attached to each which gives a glimpse of the road. It has up class high head leather sofas with a lot of head room overall makes this place a unique for a Sunday Morning Breakfast.

The evening was set with specially curated menu by the chef himself, and he knows how to keep the patrons happy.
Amuse Bouche

Amuse Bouche: It was Potato & Leek with Chive Sour Cream and the Golden Fried Leeks. This was warm and soothing served in a Cup.
Salad @ Indigo Deli

Salad: This was a freshness overloaded salad with Kale, Fennel, Apple Batons added the little sweetness, Dried Cranberries this added sourness, Feta & Candied Pecan nut for the crunchiness. Perfect way to start your dinner.

Wafer Thin Pizza @ Indigo DeliWafer Thin Pizza @ Indigo Deli

Pizza: 3 Pepper & 3 Cheese Pizza: IndioDeli is the only place where you get the wafer thin crust, I really mean wafer thin crust here!! Perfectly baked without spoiling the crust. The 3 Cheese were cheddar, scamorza and mozzarella and 3 Peppers were Red, Yellow and Bhavnagari peppers. Combination of all six gave a perfect level of spice and good amount of cheese to make this a complete pizza.
Wafer Thin Pizza @ Indigo Deli

SDT Olives and Capers: Little sour with little juice in the Sun Dried Tomatoes(SDT) along with Black olives and Capers, these are basically the edible flower buds (capers), often used as a seasoning, and the fruit (caper berries), both of which are usually consumed pickled as well. The SDT are homemade to get the perfect quality of the tomato.

Spinach & Jerusalem artichoke Ravioli: Jerusalem Artichoke is also called sunroot, sunchoke, earth apple, or topinambour. Ravioli was served with blistered cheery tomato, Crispy basil and bell pepper puree. These Ravioli were very delicate yet they were holding the stuffing very well.
Lemongrass Kaffir Lime Steamed Rawas with Cilantro- Black Olive Gnocchi Sauteed shitake and charred corn

Lemongrass Kaffir Lime Steamed Rawas with Cilantro- Black Olive Gnocchi Sauteed shitake and charred corn: As Chef wanted me to try the vegetarian version of this so with his magical cooking skills he took off the Steamed Rawas and made me a Veggi version. This dish was highly appreciated on the table by the non-vegetarians and it was swiped off within minutes.

Desserts: Indigo Deli offers excellent varieties of desserts including multiple options of homemade ice-creams. We tried almost all the Desserts including Apple Pie, Chocolate layered Almond Cake, Chocolate Mud Cake and Blueberry Cheese Cake. All were just awesome.

IceKraft- Lets paint the town Black

Mumbai based brand has setup three outlets in Pune. IceKraft, crafting happiness is known for their Gothic black ice cream. The goth culture is now reflected in the ice creams as well. So all the black lovers Ice Kraft is where you would definitely like to visit. Know that when you have the black charcoal ice cream you’re in for a surprise because the ice cream is black but has a hint of the orange flavour which only works in the favour of it.

IceKraft’s Black magic is spreading fast among the foodies and the youngsters. This is one of the very unique ice-cream which has activated edible charcoal in it. Along with Ice-cream they have lot many thing to offer, like Nutella Freaky shake, waffles, pancakes, fries, different types of corn based dishes, some healthy salads and sandwiches. So its a one stop destination for the all the age group.

The B Team was invited for the tasting some of their Snacks and the of-course the Black Ice Cream.

The Hurricane Fries: Its a Twisted/tornado Potato fried and drizzled with flavour of your liking which are mentioned in the menu. It was nice and crisp till the end.

Zucchini Fries: Crunchy with soft steamed zucchini inside sprinkled with their secret spices. Something really hard to find in a regular cafes.

Sweet Potato Fries: It had sweet and spicy taste to it which made this stand out from the regular masala fries.

Crinkle Cut Fries: Nice big chunky pieces with the similar masala sprinkled on it which was on the sweet potato fries, this made bit difficult to differentiate between the both. Although you have different option of sprinkles to choose from like Herbed, Paprika, Cheesy, Chaat and Pepper.

Steamed Corn with Pepper: This was the taste changer dish from the course which was served till now. Hot and spiced up with Pepper golden corns tossed with butter.

Desserts:

Coffee based Absolute Chocolate Freak Shake: This had a coffee base, Oreo, Nutella, brownies, choco-chips and hot fudge, it was one of the messy shake I have ever eaten. Once it is placed on your table you should stop counting your calories intake. This was really nice in taste, but mind it, you will have to share it!!! Its huge!!

Chocolate Pancake: Moving on to a much decent and well plated item from the menu was this Pancake. Nice hot pancake is soaked in Chocolate syrup.

Waffle with Black Ice Cream: This was out of the menu. generally they serve it with the regular waffle but just for us the owner wanted us to try it out and give the feedback. As the waffle was hot the Ice cream was melting and it got messy by the time we tried to capture some amazing pictures.

Black Monster: This was as usual the star of the evening, Black Waffle cone with steel grey with Activated Charcoal Ice-cream with some shredded Choco-chips sprinkled on it. Wow this the first expression come in when the ice-cream was served. There was bee line for capturing the best picture of it. It altogether a different experience to have it. It was perfectly sweetened and had a very earthy taste to it.

New Poona Bakery – Product Review.

New Poona Bakery (NPB) is one of the oldest and largest bakeries in central Pune. Known for its delicious cakes and mouth watering puff (pattice), it is popular amongst city’s youth. New Poona Bakery offers a large assortment of Cakes, Pastries, Cookies, Kharis, Breads, Toast.

They are one of the oldest and largest bakeries in central Pune. Started in year 1967 at Budhwar Peth, Pune. Well known for satisfying the taste buds of Puneites. Today the 3rd generation is managing the business with completely new perspective of modernisation & management.

For ever increasing demand they have expanded the manufacturing capacity by establishing huge new factory setup at Wakad in 25,000 sq.feet area. Here they have separate unit to manufacture pure vegetarian baked products, so pure veg. from New Poona Bakery is really a 100% pure veg. most of the customer is aware of it and appreciate it a lot. The set up is to cater segment like institute, industries, IT sector, hotels and specialty caterers. Hardly there is anyone in Pune who don’t know New Poona Bakery (NPB).

Recently I received an Gift hamper of their lovely products. The delivery person was at my door by sharp 8am and he delivered the fresh products like:

1. Garma Garam Pattice : I have been eating these pattice since childhood. Nice crisp almost oil free with good amount of stuffing. Best for the Sunday family Chai time.

2. Fudge Brownies: I had never tried these before, These were really good, not too sweet not to dry.

3. Whole Wheat Toast: Toast are the one of the best products NPB have, Nice and crunchy, and you can have guilt free as there are made up of whole wheat.

4. Makkhan Khari: Their Khari is very different from the regular khari which you can buy from the local market. Taste wise it has little sweet taste and the crunch makes it different from the others.

5. Special Toasted Butter Buns: I have eaten toasted buns from Kolhapur but now onwards these will be in my house. Perfectly baked, crunchy and very good in taste.

6. Butterscotch Cookies: I found bit hard at the centre and too greasy.

7. Authentic Maharashtrian Bhel or rather Puneri Bhel ( with Ready mix Packets Inside): These is perfect small family pouch for evening snacks. Kids loved the taste and its very easy to make. Very nicely packed.

Over the years NPB has introduced many new products without compromising the quality and the quantity and thats what the legends do. NPB is truly a Legendary Bakery on Pune.

212’s All New Menu – Reviewed

212’s All Day, All New, All Good menu has launched.

On every visit 212 has some surprises stored. This time it was their all New Menu launch, and I was privileged to be invited for the tasting of the same.

Let the journey of New menu begin….

Curried Potato Mille Fieulle: Mille Fieulle is a French pastry whose exact origin is unknown. Its modern form was influenced by improvements of Marie-Antoine Carême. Traditionally, a mille-feuille is made up of three layers of puff pastry (pâte feuilletée), alternating with two layers of pastry cream (crème pâtissière), but sometimes whipped cream or jam are substituted, when substituted with jam this is then called a Bavarian slice. The top pastry layer is dusted with confectioner’s sugar, and sometimes cocoa, pastry crumbs, or pulverized seeds (e.g. roasted almonds). Alternatively the top is glazed with icing or fondant in alternating white (icing) and brown (chocolate) stripes, and combed.
But the at 212 it had a savoury version of it. The three layer of crunchy curried potato served along with veg stew, kokum lassi and coconut-chilli chutney. Veg Stew is the best ever I have had till date. In between layer filling there was mashed Potato and spiced up with Indian spices very similar to Dosa Subji. Nice Innovative way serving. Beautifully plated. although the portion size can be increased.

Eggplant Bruschetta: Eggplant would be so delicious I never thought of it. This dish is absolutely in the list of “not to be missed” The crunchy bruschetta was topped with Eggplant, Brie, Fried onions, to add the little sweetness to overall taste Figs were placed at the end. This was such a beautifully prepared, Hands down to the Chef.

Spicy Emmental Arrancini: These are stuffed rice balls which are coated with bread crumbsand then deep fried. They are usually filled with ragù (meat and tomato sauce), mozzarella, and peas. The name, which is translated as “little orange”, derives from their shape and colour which, after cooking, is reminiscent of an orange.
Arrancini were just had a perfect Crunchiness with Googy Mozzarella Cheese inside. This was served with the Chermoula Mayo.

Poutines:

Kung Fu Fondue: These were the googy-iest of the lot. So much of cheese right from the first bite. With more cheese at the bottom. So don’t forget to keep digging it. But make sure you don’t keep it unattended for a long time as this might turn in to a Soggy one. Szechwan Tofu added some spice to it and cut the cheesy taste.

Avocado & pomelo Salad: It was a freshness overloaded with Arugula, Peanut and Horseradish Dressing topped with some Walnut Chikki to add the crunch. As per my taste buds it was too sweetened.

Trio of Chips & Salsa: There were three types of Nachos Spinach, Beetroot,and Classic. These were served with different flavours of dips, like Sour Cream, Guacamole, Cilantro, Chipotle, Tomato Salsa, and Habanero Salsa. All the dips & salsa were outstanding, in terms flavour and spice levels. The Chef had taken extra efforts to create all these dips.

Burgers and Sandwiches:

Two Mushrooms Burger: This was a monster burger to with crunchy patty along with melted Gruyere Cheese. Its a super meal in itself. It was served with Fries and fresh salad.

Masala Paneer Scramble: Fusion of Indian and English cuisine. It could have been more crisper. The filling was with crispy potatoes and mint spread and served with Raisin Chutney along with Fries and Fresh Salad.

Chettinad Cottage Cheese Pizza: This is one of the innovative recipes from 212 cafe and bar. Paneer Chunks tempered with Mustard and Curry Leaves. Paneer chunks were nicely marinated and tender enough to melt away in your mouth. The cheese played its role of googy-ness and the thin crisp crust was holding strong all drama happening on top of it.

From the Grills:

Green Peas, Baby Potatoes & Celery cake: This was one of the most delicate dish served on the table. The filling was with soft sweet potatoes little spiced up with the celery patties wrapped up in grape leaves which were first steamed and then grilled and served with demi glace sauce. We had to unwrap it to enjoy the delicious stuffing.

Mains:

Truffle, Porcini and Buratta Risotto: This was the most googy and creamy Risotto I ever tasted. 212 has taken the Risotto to the next level and you will be addicted to it from the very first bite. Strong Truffle gave it slightly garlicky with a deep musky aroma while Porcine gave a deep earthy flavor which enhances any dish. Black olives and crispy banana flowers were added to give the risotto a different after taste on the taste buds.

Ultimate Beetroot Gnocchi: Nice colourful and Beautifully plated tender Gnocchi mixed with Spinach, Shallots and for the tangy flavour orange zest was added.

Desserts:

Tiramisu Eclairs: After having such a long list of newly introduced menu, For desserts I have a separate gut!! Mascarpone cheese was soft and Coffee dust gave a different taste to it. Along with some dark chocolate chips and Figs also had their own role to play.

Peanut Butter Pie: Chocolate Ganache Peanut Butter Pastry, served with Vanilla Ice- Cream, Combination of both have Mixed flavours of Sweet Nutty and Chocolaty and made the dessert complete.

Good Drop Wine Cellars is a specialist sparkling wine producer. Founded in 2009 by chartered accountant turned winemaker Ashwin Rodrigues who learned his craft in the Barossa Valley, Australia, our objective is be at the forefront of the Indian wine revolution. We do this by offering quality and value wines, tailor-made for the Indian wine drinker. We got off the blocks in 2010 by using contract winemaking facilities in Nashik, Maharashtra. Our own sprawling state-of-the-art winery was set up in 2013 at the Vinchur Wine Park, Nashik, Maharashtra. Our wines are available in Maharashtra and Goa and will be steadily expanding to new markets.

THE WINERY

A winery is the heart of a wine producer. In 2013 Good Drop Wine Cellars set up one of India’s most innovative wineries in Vinchur Wine Park, Nasik, designed for especially for sparkling wine production. A sprawling facility, it has a current tank capacity of 550,000 litres extendable to 2 million litres within the existing building. The entire building is a pre-fabricated structure using sandwich PUF panels, a first in India. The machinery is largely imported from Italy. The winery is equipped with a range of pressure vessels especially for Charmat, a method of sparkling wine production.

I was Invited for the Tasting of their beautiful Sparkling Wines and Rio Spritzers at Zodiac 24hrs Astral Coffee Shop in Fortune Select Dasve Lavasa.

There was huge array of Saturday Bubbly Brunch right from the live counters, Fresh Salads, Starters, Mains and Delicious Desserts. You need to have huge appetite to taste all of these along with the Bubbly Wines.

Good Drop Wines had two variants of wines to offer: Rose Spumante and Vino Spumante.

What are Spumante Wines: It is also called Asti or Asti Spumante It’s made from the Moscato Bianco grape.
Frizzante and Spumante are two wine words most associated with sparkling wine.
Both frizzante and spumante describe the level of effervescence (i.e. the strength of the bubbles) in a bottle of sparkling wine. Wines labeled ‘frizzante’ are what we call gently sparkling, while wines labeled ‘spumante’ are more effervescent and fully sparkling.

The carbonation in sparkling wine is created using one of two methods: Méthode Champenoise (Champagne method) or Metodo Italiano, which is also known as the Charmat-Martinotti method.

Good Drop Wines is made from the Charmat Martinotti Method. They are sweet and quite bubbly which you can feel it with every sip. My personal favourite is Vino Spumante – Its Sweet Mild and Bubbly. Next one in the line up was the Rio Spritzers- There were three flavours, out of which I could try two only. Lemon & Passion and the other one was Orange & Pineapple.

Rio- First Fizzy Wine in India to be packaged in affordable party drink with a pull-off cap.
I loved the Tangy and Refreshing Lemon & Passion Rio Spritzer. This was the Best ever combination till now I had in Alcoholic based Fruit flavour Drinks. All the Spritzers contains 8% v/v Alcohol.

Orange and Pineapple– This had Tangy and slight after taste of sweetness with every sip. Nice palish in colour.

Bubbly Brunch: As I mentioned earlier that the buffet spread was huge and one should have a good appetite for it. As per the brand standard the quality of the food was really good. The Staff is courteous and happy to help.
